Our Fusion Chicken Curry spice mix can be used to make a delicious curried vegetable dish. We used peas, potato and cauliflower, but you can use any vegetable in your fridge!
1/2 Onion chopped
1 Medium Tomato chopped
1 1/2 Tbs of Fusion Chicken Curry Spice Mix
1 Cup Green Peas
1 Medium Potato
2 Cup Cauliflower chopped
1. Add 1 Tbs of oil to pan and over medium heat brown chopped onions
2. Once onion is browned, add chopped tomato and Fusion Curry Spice Mix, let cook for 2-3 minutes.
3. Lower heat and add vegetables and cover pot for 15-20 minutes or until vegetables are soft.
4. Serve over rice or with naan
